To say that cooking and I are not huge fans of each other would be stating the truth with a great deal of accuracy. To be fair, it's both our faults really. If cooking didn't take so long to simmer or boil or bake then I wouldn't feel the need to wander off to try and get one more knitting row done while I waited, often with the end result of the food being sliiiightly more charcoal than was intended.
(Actually, it's mostly cookings fault. I'm calling it.)
Add to that my desire to spend less time in the kitchen and more time knitting while I procrastinate about housework, and I am a master of quick meals. I am slowly building up a stash of fast meals that don't make me feel crap after eating (I'm looking at you, frozen pizza), and here is one of my current favorites. I manage to make it even when I've been hit with the sad stick, and I feel good because I then feel healthily superior because I've eaten vegetables *puffs up with pride*
All it takes:
- As many brown mushrooms as you want (I normally do two)
- Cherry tomatoes, chopped
- Olives, halved
- A tiny bit of sliced onion
- Feta cheese, crumbled (or any cheese you want)
- Salt, and whatever herbs you like. I normally do an Italian herb mix
Mix all of it together. Remove the stalk thing from the mushrooms, and fill it with the mixture. If it's summer, bon appetite! If you like it warm, grill until the cheese is melty (the mushroom will release some liquid if you grill it, and there is probably a way to stop it, but that involves more effect than I currently have to give at the moment, I'm afraid).
(The keen eyed observer may notice that I don't have onion or feta cheese in mine. I didn't realize that I had run out of them *hangs head. Well, I never promised to be perfect, and these were just as yum!)
Easy as! Did I not promise you speed, dear reader? Very little effort and waiting time, and it's delicious. Oh, and there's veggies. That's a plus too ;)
